Produce Mom Roasted Beets

So I have never had a roasted beet in my life. Which is surprising because I love all veggies and love trying new things. Our paths have just never crossed, until now. The Produce Mom, Lori Taylor, asked me to photograph the process of making roasted beets. Challenge accepted! This is such a rustic and beautiful veggie. So, to roast a beet- rinse, cut off tops, rub with olive oil, sprinkle with salt and vinegar, wrap in foil and pop in the crock pot on high for 3-4 hours. Pretty simple! Once they are finished, you can easily peel off the outer skin and eat. The Produce Mom suggested enjoying these on top of an arugula salad with pine nuts, goat cheese and a balsamic glaze. Delicious! And I discovered I like beets along with my 18 month old!
